I just made it again today! It is every bit as flavorful and spicy as what you can get in a restaurant (it’s actually better because it doesn’t use that much oil!) My husband and I added cilantro, salsa and a touch of sharp cheddar cheese on the tortilla when wrapping and that made all of the difference. Yes, but the downside of that is that the strips cook quickly and you can easily end up with very dry chicken. The upside of cooking the breasts whole is that the inside of the chicken remains very tender if you pull it out at 160F and rest it for 5 mins. It’s also so much faster cutting the cooked chicken into strips rather than raw. I think the solution is tossing some additional seasoning into the pan when you put the cooked chicken strips back in to mix with the veggies.

Saves so much time not having to cut raw meat beforehand (and cleanup after) and the chicken ends up way juicier too, since the strips cook fast and can easily dry out. The veggies then nicely pick up all the seasonings in the pan.

I do think it’s possible to use more seasoning to taste to get it on the chicken insides when you toss them back into the pan, since they were all used up by that point. But cooking the breasts whole again is such a winner. Thank you!5 stars
