I made the kale sausage muffins and was taking them to a party, so I actually had to make them in a mini muffin tin which made 24 of them with 2 regular size left over.
I baked the minis for 15 minutes only because they are smaller and juat looked done at that time, but the big ones weren’t done. 20 minutes total for those and all were perfect.
I also only needed 10 eggs with a little water added due to the small size.

It may be the liquid from the tomatoes and spinach. But as long as the internal temperature is where it should be, the muffins should be okay.

I cooked them for 25 minutes, and the internal temperature is above 165 degrees. However, some of them still seem runny. I know there’s liquid in the tomatoes and spinach. How do I know if they’re cooked through?

Hi Kimberly – they shouldn’t be dry. It sounds like you may have overcooked them a bit. Keep in mind that all ovens bake slightly differently. Next time, I’d recommend removing them from the oven a couple of minutes earlier. :)
